Pork Belly Glutinous Rice

How do you cope during stressful times? I like to cook comfort foods to remind me of wonderful memories and hope for happier days ahead. One of my favorite comfort dishes of all time is glutinous rice, or sticky rice. The rice is flavoured with the umani punch of soy sauce and pork belly, as well as the beautiful fragrance of shallot oil. This dish is the warm hug that your belly craves!

Pork Belly Glutinous Rice

Ingredients

  • 2 strips pork belly cut into 2 inch pieces
  • 10-12 shallots peeled and sliced thinly into rounds
  • ¼ cup vegetable oil
  • 600 g glutinous rice soaked in water for 5 hours
  • 1 Tablespoon dark sauce
  • 1 Tablespoon sesame oil
  • 1 cup water divided
  • 1 cup raw peanuts soaked in water for 5 hours
  • 1 fish fillet, any white fish Optional
  • Salt and pepper to taste

Pork Marinade:

  • 1 Tablespoon dark soy sauce
  • 1 Tablespoon light soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil

Instructions

  • Marinate the pork belly pieces in 1 tablespoon of dark sauce, 1 tablespoon of light sauce, 1 teaspoon sugar and 1 teaspoon of sesame oil. Marinate for 30 minutes to 2 hours. Drain the rice in a colander and let it dry while preparing other ingredients.
  • Heat up vegetable oil in a large wok and fry the shallots in high heat until they are golden brown and crispy. Remove them from the wok and set aside.
  • In the same wok, fry the glutinous rice with the oil that was used with the shallots. Add 1 tablespoon sesame oil, 1 tablespoon dark sauce, ½ cup water and ½ of the shallots with the rice and mix well. After stirring for around 5-10 minutes, remove and set aside.
  • In the same wok, add the marinated pork belly pieces and stir fry for a few minutes. Place in a separate small pot, add ½ cup of water, cover and cook on low heat for about 30-45 minutes until the meat is cooked.
  • Drain the peanuts that have been soaking in water. Bring a pot of water to boil and add the peanuts. Boil for about 5 minutes and drain. Rinse with filtered water.
  • Add a cup of cooked pork belly pieces and a few tablespoons of broth to the rice and mix well. Place the rice on a cheese cloth and add the peanuts and the rest of the shallots. Place it into a steamer filled with boiling water.
  • Steam at high heat for 45 minutes then stir in another ½ cup of the broth from the meat. Add another ½ tablespoon of dark soy sauce if you want. Check if rice is cooked, if not, give it another 15 minutes of steaming.
  • Optional: In a frying pan, add a tablespoon of vegetable oil over high heat. Make sure the fish fillet is very dry and sprinkle it with salt and pepper. Cook one side of the fish for 4 minutes over high heat. Lower it to a medium and cook the other side for about 2 minutes. Set it aside to cool before shredding.
  • Add the rest of the cooked pork belly when the rice is cooked. Sprinkle the shredded fish on top of the rice (optional).

You can find dark soy sauce at any Asian supermarket if you do not live in Asia.
