Salmon Dinner for One

Too many people would rather not fuss when they are cooking for themselves, whether or not they’re single or their partners are away. But you should fuss over yourself! Treat yourself to a lovely home cooked plate of food and pour yourself a glass of your favorite drink. Celebrate you! Here’s something I threw together one night when I was obsessing over Masterchef Australia and wanted to make something that had all the elements on one plate. It’s crispy, savory, slightly sweet, tangy, and wonderfully delicious!

Ingredients

Ingredients:

  • 3 stalks broccolini
  • 1 small skin-on salmon fillet
  • ½ Tablespoon butter
  • 4 pieces oyster mushrooms
  • 1 bunch somen noodles*

Dressing:

  • 1 Tablespoon miso paste
  • 2 Tablespoons mirin
  • ½ teaspoon rice vinegar
  • 1 Tablespoon lemon juice
  • 1 teaspoon honey
  • ½ inch ginger peeled and finely grated
  • 2 cloves garlic finely minced

Instructions

  • Wisk the ingredients of the dressing together in a small bowl. Set aside.
  • Preheat the oven at 200℃ (400℉). Toss the broccolini with a dash of salt and pepper, and olive oil. Roast for about 15 minutes or until cooked. I removed the leaves and roasted them to add a crunchy texture to the dish (it’s optional!).
  • Dry the salmon fillet with paper towels and sprinkle salt and pepper on both sides. Add about ½ tablespoon of vegetable oil to a medium pan over high heat. Swirl the oil around for equal distribution. After a minute or two when the pan is hot, add the salmon, skin side down, and press it down with a spatula for a few seconds. Turn down the heat to medium high and let the fish cook for about 4 minutes until the skin is golden brown and crispy. Flip the fish around and cook it for another 2 minutes. Remove and let it rest on a plate.

Notes

*Somen noodles are sold individually bunched, wrapped with a small ring of paper. ½ to 1 bunch is perfect for an individual serving, depending on how hungry you are!
