Easy Fried Brown Rice
Fry it up! This basic fried rice recipe can easily be modified to suit your taste. You can add meat and/or seafood to make it a more substantial dish, as well as add your favorite vegetables to the mix. Many other recipes call for leftover rice to be used but I find that freshly cooked brown rice works just as well. The hearty texture and nutty flavor of brown rice bring fried rice to a whole new level of yumminess!
Easy Fried Brown Rice Recipe
Serves 2-3
Ingredients:
- 1 cup brown rice
- 2 cups water
- 2 eggs
- ¼ teaspoon salt
- 1 Tablespoon vegetable oil
- 4 cloves garlic, minced
- 2 shallots, minced
- ½ cup diced carrots
- ½ cup diced green beans
- 2 teaspoons soy sauce
- Pepper to taste
Rinse the brown rice until the water is clear. In a medium pot, add 2 cups of fresh water to the rice and put the uncovered pot over high heat. When the water starts to boil, lower it to a simmer and cover the pot with a lid. Simmer for 20 minutes and shut off the heat when all the water has evaporated. Leave the rice in the pot and get your other ingredients ready.
Beat 2 eggs in a bowl and add ¼ salt and pepper to taste. Set it aside.
Heat up oil in a large frying pan over medium high heat. Add the garlic and shallots to the oil and stir fry them until fragrant. Add the carrots and green beans and stir fry it for a few minutes until cooked. Remove them and place in a bowl or plate.
Return the pan to the heat and pour the beaten eggs to the pan. When the bottom starts to cook a little more but the top is still half runny, add the cooked rice on top of the eggs and start stir frying them together. Add the cooked vegetables, 2 teaspoons of soy sauce and pepper to taste. Keep stirring until rice is nicely incorporated with all the other ingredients.
Taste the rice and add more soy sauce if needed. Serve on its own or with other Chinese side dishes.
